JOB SUMMARY
The primary responsibility of the Bartender is to serve guests and assist the Dining Room and Kitchen teams while providing prompt service and genuine hospitality to everyone. Bartenders’ organization and prioritization are strong. S/he manages all of the guests’ requests while simultaneously directing the Apprentice Bartenders in executing flawless service.
Bartenders have a deep understanding of the technical relationship between the Dining Room and Kitchen, beverage and food delivery etiquette, as well as a mastery of the necessary steps to execute phenomenal service. Bartenders are responsible for all aspects of service and must hold themselves and their teammates to the highest standards of service excellence. All duties are to be performed in accordance with departmental and property policies, practices, and procedures, as well as Dagny brand standards as outlined in the Service Manual.
JOB FUNCTIONS
- Has complete knowledge and displays mastery of all food menu items, specifications, and allergens.
- Has complete knowledge and displays mastery of any sprit brand behind the bar, structure of the cocktail menu (ingredients, method of presentation of specialty cocktails and standard cocktails), classic cocktails, all wines by the glass, all non-alcoholic beverages, specifications, and allergies
- Has full knowledge and can recognize all members of ownership, leadership, and management teams
- Has full knowledge and can discuss Origins, operations, and concept/branding points of the entire Dagny
- Has full knowledge and can discuss all areas of the Dagny and their design inspiration
- Actively participate and contribute in pre-meal meetings
- Knows and executes the service guidelines outlined in the Service Manual
- Always provides gracious service and genuine hospitality:
- Greets guests in a positive, friendly, and welcoming manner using eye contact
- Assists guests through our spaces, through seating or wayfaring
- Bids farewell to guests, using guest’s last name when known
- Executes the service guidelines and upholds service standards outlined in training manual.
- Consistently follow sequence of service utilizing all proper procedures and techniques standardized by management.
- Must work as a team and pro-actively assist all employees in servicing guest needs with a controlled sense of urgency.
- Communicates the needs of the guests to kitchen and management. Informs management of guest reactions and comments. Assists management as needed to ensure smooth operation and quality service.
- Always uses position numbers.
- Executes opening, closing, and ongoing sidework
- Provides other service staff direction and coaching to ensure proper operation of the bar and assist them when necessary.
- Trains new bartenders and bar back when necessary.
- Mix and Serve drinks following standardized recipes for specialty cocktails s well as classics.
- Sell and suggest premium and top shelf product, as well as specialty cocktails.
- Oversee overall operation of the outlet bar and lounge areas.
- Provides food service as needed.
- Ensure correct product is utilized.
- Rings beverages that are poured or served, collects payment, and follows all cash handling and variance procedures, including preparing daily reports and submitting appropriate paperwork.
- Clean of all equipment, tools, and supplies and maintain equipment in good working order.
- Maintain the cleanliness and appearance of the bar.
- Re-fill cheater bottles, juices, syrups, ice coolers, garnish trays, straws and napkins.
- Stock the bar counter with supplies.
- Maintain complete knowledge of all menu items, liquor brands, beers and non-alcoholic selections available in the assigned outlet.
- Anticipate the guests’ needs and respond appropriately with a sense of urgency.
- Work as a “Team”, assisting all guests’ and employees’ needs and inquiries.
- Maintain a level of professionalism that will make guests want to return.
- Obtain assigned bank and ensure accuracy of contracted monies, keeping bank secure at all times.
- Keep count on tickets and perform cash drops at the end of the shift.
- Complete opening and closing side duties which include, but are not limited to: checking quality and amount of all bar stock and supplies through checklist; setting up bottles in display cabinet and speed rail; checking condition and cleanliness of blender, shaker and other tools; checking temperature of refrigeration units and glass wash machine.
- Communicate with Managers, Co-Workers and Guests in order to fulfill and address any issues or needs requested by guests and or other employees.
- Resolves guest complaints within scope of authority; otherwise refers the matter to management. Notifies supervisor and/or Security of all unusual events, circumstances, missing items, or alleged theft.
- Performs other restaurant duties as requested by management.
- Provides other service staff direction and coaching to ensure proper operation of the bar and assist them when necessary.
- Produces syrups, infusions and garnishes when needed.
- Learns the proper techniques for crafting cocktails per Dagny training guidelines.
- Participates in service/culinary education sessions
- Follow uniform and appearance standards
- Follows and executes the Dagny’s core service standards as outlined in training.
- Follow all procedures and policies set forth by the company, division, and department.
- Follow all health and safety regulations.
- Successful completion of Restaurant Training Program, as well as continued successes in graded testing and training exercises.
OTHER
· Other duties as assigned.
HEALTH & SAFETY
· Adhere to property safety standards and report all accidents to Security and Human Resources.
· Comply with all “emergency” situation including but not limited to fire alarm, colleague injury, guest injury, colleague conflict, guest conflict, Intoxicated/rowdy guests etc.
· Ensure that all potential and real hazards are reported immediately to direct supervisor
· Adhere to established standards for chemical use.
· Know and enforce Dagny’s and department’s security policies.
· Ensure work area, materials and equipment is maintained in a clean and tidy manner.

· Must be in possession of valid driver’s license to drive company vehicle.

QUALIFICATIONS & REQUIREMENTS
· A minimum of one year experience in a full-service, preferably upscale restaurant setting
· Working understanding of wine, spirits, beer, and other beverages and their proper service
· A highly motivated and energetic personality
· Effectively communicate in English, in both written and oral forms
· Broad knowledge of café service and coffee/tea/beverage.
· A strong commitment to excellence in hospitality
· Interpersonal skills to effectively communicate with all business contacts and team members.
· Working knowledge of Point of Sales (POS) systems and operations
· Ability to effectively communicate in English, in both oral and written forms.
· Working knowledge of health and safety regulations.

· A minimum of three (3) years of experience in a fine dining restaurant or similar environment
· Spirits and wine certification preferred

Physical Requirements
· Must be able to exert physical effort in lifting 50 pounds, endure various physical movements throughout the work areas, climbing, reach up and down, remain stationary at times throughout work periods, and satisfactorily communicate with guests and colleagues to their understanding.
· Ability to spend extended lengths of time viewing a computer screen.
· Must have finger dexterity to be able to operate office equipment such as computers, printers, 10-key adding machine, electric typewriter, multi-line touch tone phone, filing cabinets, FAX machines, photocopiers, dolly, and other office equipment as needed.
